Pieksämäki on Google MapFlick Pictures of FinlandOur trip started on the morning of Friday the 10th of July at 8am when our Viking Line ferry pulled out from Tallinn port on its way to Helsinki. There were four of us (Eva, me and her parents Pille and Albert) were to stay at the home of one of Albert's Finnish friends in Pieksämäki (see Google Map) which is one of 17 municipalities in Southern Savonia region (Finnish: Etelä-Savon maakunta, Swedish: Södra Savolax landskap), the heart of Finland's famous lake region. According to Wikipedia, in case you didn't know, Finland has 187,888 lakes (larger than 500 m²) and 179,584 islands. One of these lakes, Saimaa, is the fourth largest in Europe. We spent both Friday and Saturday night at this home in Pieksämäki. Friday, including the...

Have I been living under a rock?
Is it possible that I can have waited until now to actually take a look at the details of Jim Lahey’s no knead bread method as revealed to the world by Mark Bittman in the New York Times a couple of years back?
The answer, it would appear, is yes.
I was finally prodded into action when I read about kickpleat’s successful first foray into the world of no kneading. I read her description of the method. I went back and had a look at the original recipe as posted in the New York Times. Could it really be that easy to produce a loaf of bread that looks like a real French boule from a real French boulangerie. Well, yes, apparently it is…

Wine making is something I've wanted to try for years and now that we grow the majority of our own food at home one of the biggest expenses on our tiny food bill is alcohol. The timing for having a go at this craft is perfect. It will reduce our expenses, utilise locally grown wild plants and cut down on all those air miles and energy that go into producing commercial wine. Of course, I'll still enjoy the odd bottle of Cabernet-Shiraz, St Emilion or Chateauxneuf Du Pape! The question is will our home brewed wine taste nice enough to replace our weekly bottle of bought red wine or will friends throw their eyes to heaven as we produce our dreaded liquid offering at dinner parties. Time will tell.
I ordered a few glass demijohns, yeast and yeast nutrient from The Homebrew Centre...

As many of you know I am a fully qualified master brewer who gave it all up for a life of absolute fucking drudgery sitting in front of a flickering pc for eigth hours a day purveying other people's misery and dealing with the most obnoxious people ever to walk God's green earth!!!! But anyway enough of my rantings, like many of you I use alcohol to sooth and regulate my moods, from angry in the morning, to less angry in the afternoon, to loved-up in the evening and crying in a naked and humilated heap at night. To this end I have decided to indulge my first passion, after looking at pictures of photoshoped celebreties, and start brewing again.
Now since my winery failed, due to the fact that I bought the bloody thing in Malafornia, I have had recourse to using a kit to produce my...
