image I had the idea of making a savoury tart, even though I was all cookied out after the Twookieparty and never wanted to set eyes on a baking sheet or oven for a long long time!  Quiches wouldn't be on my Top Ten list of things I like to eat - I find a lot of them too eggy and rubbery with cheap ingredients, but I am very fond of the M&S summer vegetable quiche which has lots of nice seasonal veg in it.  Aldi had a special on asparagus - 89c for a nice big bunch, so I bought two.  A few weeks ago I bought a rectangular loose-bottomed tin in Kitchen Complements and it was crying out to be used - hence yesterday's tart!I decided to be brave and make my own pastry - you don't have to, if you don't want to... a packet of readymade shortcrust will work just fine. ... image With all the tooing and froing of the last couple of weeks I have forgotten to take photos of our take home harvest which has become a daily bounty now with the warm weather.Our first earlies, Charlotte are being dug and are blight free and unmarked, anyone who has had them has been full of praise for their taste and of course the dry weather has kept them clean skinned.They are being sprayed for blight every week and so far so good.We have had a bumper crop of strawberries and the raspberries are just beginning to redden, hence the fruit net being put up in a hurry.Rhubarb is growing apace, the new plants seem to be catching up with the older ones.We are getting very excited about the Sweet corn for once it has the correct temps and is almost growing while we are looking at it!The salad... image Years ago a former boss (Freak knows EXACTLY who I'm talking about) was very fond of the acronym KISS.  It means Keep It Simple Stupid, and it's how I like my food.  I'm not a huge fan of over tweaked and over fussy food and this salad fits in with my philosophy perfectly - simple, quick and easy.Simple Potato Salad750g New Potatoes3 large Spring Onions, finely sliced1 handful Mint, finely shredded3 tbsp MayonnaiseSalt & PepperBoil the potatoes in salted water until tender - this takes about 15 minutes.Drain in a colander & place on a wire rack until cool - cover with a teatowel to avoid any flies in the area (of which there are many at the moment!)When the potatoes are cool, chop into mouth sized pieces and mix in a bowl with the spring onions and mayonnaise. ... image I like lazy salads - by that I mean ones which look impressive but are very simple to make.  I love couscous because it's cheap, it's filling and a little goes a loooong way!  Also, it soaks up flavours really well, so is the perfect host for lots of crunchy veggies.As most of you will have gathered at this stage, I hate peppers & coriander and you will never see them on my blog.  But if you like them, then use them in this recipe with abandon.  If you have some bocconcini or feta, throw it in... the feta is especially good with the couscousThis quantity makes enough to almost fill a 2 litre container - I have a collection of airtight snap top containers for the likes of soups and salads and they fit perfectly in my overstuffed fridge.  With Twizza night... image We had lunch with my MIL and her Canadian rellies today, who are over visiting from Quebec and I was telling them about the lovely pork from Bord Bia and my recipes so far. Because we had a fairly big lunch, I wanted to cook something light for dinner. Allotment Update via Organic Growing Pains, May 11th, 2010 at 23:34

image I spent most of today on the plot and remembered to take my camera and more importantly remembered to take some photos!I had a small harvest to bring home but anything at this time of year is welcome.Rhubarb with which I made a rhubarb and pear crumble, its like a sweet and sour desert!The lettuce is from the greenhouse and is the winter cos which is a lovely crunchy lettuce with a tight heart and some spinach leaves to add to the salad. The salad bed, I have two lots of spring onions, the lisbon and purplette. There is an iceberg lettuce under the fleece,the name escapes me but the seeds were on a tape it is the first time I have tried this and will give an update on progress.Ruby swiss chard went in today as another plotter had too much and kindly passed on the excess to me.In the... Looking for a quick "hands on" starter dish which comes packed with a punch?  Well I'm pretty sure these quesadillas fit the bill!  I am completely addicted to chorizo, it's full of great smokey spiced flavour, has a fantastic, rich, deep red colour and adds so much to any dish you use it in. image I am coming to you live from my hotel room in the sunny south of Ireland in Ballingcollig, Cork.  I was doing a cookery demonstration for the Hope Foundation last night and it went extremely well!  It was my first time doing a demo in front of a live adult audience, so I couldn't rely on my usual school demo tricks like asking them what they bring for their lunches, and of course every kid sticks up their hand.  No this is a little different, but in a good way, I get to give more tips about the stuff I am cooking and I can choose dishes which are a little more interesting than stuff only kids will eat. image One of the things I mastered last year, was preparing healthy dishes which are easy to have with you on the go.  We (Industry) were on the road everyday during the summer when we released our first two singles so I made sure we all ate well in between our fairly tight schedule.  Healthy salads were normally on the cards and went down the best, but if we were stuck for time quick and tasty wraps sorted us out! image If you follow me on twitter, you will probably be sick of me talking about it, but we (Industry) are currently on tour with JLS for their tour dates in Ireland. It makes a stark contrast to all the cooking I have been doing lately! image If you don't know who Ken Hom is, where have you been hiding!  When I was growing up he was the king pin when it came to Chinese cooking, he was the guy you turned to when you needed advice on which wok to buy and how to create that very first stir fry.  I was introduced to him via his first cookbook  "Ken Hom's Chinese Cookery" which one of my aunts had bought back in 1984, being an avid fan of Chinese cookery I tried so many recipes from this book and have been a fan ever since. image Now I don't know about you but when it comes to coleslaw I am extremely picky and only homemade will do. There is absolutely nothing worse than the soggy, boring, mayonaise laden coleslaws available from supermarkets which have been sitting in the salad bar all day long. Don't get me wrong, some places can get it right, but they are few and far between. It is extremely inexpensive and takes only a few minutes to make a really tasty coleslaw at home, plus you can add whatever you want to it! image Well, scallions, actually. At least that’s what we always called them at home. In fact, as far as I can recall, I only started to become aware of the alternative name “spring onion” when I got into far eastern cookery, where it was hardly possible to flick through a cookbook without stumbling across a clutch of recipes that involved spring onions in some shape or form. And even though, technically, the terms scallion and spring onion (and green onion, come to that) all referred to exactly the same vegetable, somehow spring onion seemed a bit fancy-pants to me.
